When you change the pitch of your voice by signing a new note, you are mostly just making your vocal chords vibrate faster or slower, but you are not changing the shape of your vocal tract, and therefore where those spectral peaks exist in your individual formant. For example, men tend to have formants centered around a lower frequency while women tend to have formants that are higher in frequency. In speech (and singing), a "formant" is the resonant filter that your individual vocal tract makes, and is part of what gives everyone's individual voice its characteristic sound.
